Crispy Skinned Baked Potatoes

4 medium/large russet potatoes cleaned and dried 4 tbsp olive oil or avocado oil 4 tsp fine unrefined mineral or sea salt 2 tsp flaky sea salt like Maldon or kosher for finishing
Begin by giving your potatoes a thorough scrub with a vegetable brush.
Coat bone dry potatoes (see tips) with a tablespoon of chosen oil with a brush or hands
Sprinkle with fine salt and rub over whole surface of potato.
Prick potato all over with a fork.
Place on a baking sheet and bake near the top of the oven at 400°F (200°C) for 1 - 1.5 hours, or until potatoes are tender all the way through.
Remove from oven and allow to sit for about 10 minutes before serving.
Cut a cross in the top and fluff interior slightly. Serve with a knob of butter or toppings of your choice.
